Here is one of my family’s FAVORITE pumpkin recipes that they request all year long! The best part is that they are good for you! Made with oat flour, no refined sugar and baked, you can enjoy them guiltfree!
Baked Pumpkin Cinnamon Sugar Donuts
Donuts:
1/2 cup coconut oil (melted)
1 /2 cup monkfruit sugar
1 3/4 cups + 2 Tsp oat flour
1 1/2 cups pumpkin puree
3 eggs
1 1/2 tsp pumpkin pie spaice
1 tsp cinnamon
1 1/2 tsp salt
1 1/2 tsp baking powder
Topping:
1/4 cup butter or coconut butter (melted)
1/4 cup sugar
1 1/2 2 Tbsp cinnamon
Directions:
Preheat oven to 350 degrees and grease 2 donut pans.
Mix all ingredients (except for the topping) together in a medium size bowl.
Pour/pipe batter into each donut ring on pans using a spoon or pastry bag.
Bake for 15-17 minutes.
Remove from pans and let cool for a few minutes on a wire rack
Meanwhile, melt butter or coconut oil and mix cinnamon and sugar in separate small bowl for your topping.
Take pastry brush and spread butter or oil over each donut (making sure to coat completely).
Dip each buttered donut into cinnamon sugar mixture and place on a dish to serve.
Eat immediately!
