These are one of my family’s FAVORITE Chocolate Chip Cookie recipes, in fact it’s pretty much the only one I make. I typically make them once a week to have on hand for healthy snacks. I promise you will have a hard time stopping at just eating one!
Healthy Protein Packed Chocolate Chip Cookies
Ingredients:
2 1/2 cups almond flour
1/2 tsp baking soda
1 heaping scoop of vanilla protein powder (I prefer Juice Plus Complete)
1/2 tsp sea salt
2 TBSP ground flaxseed
1/2 cup monkfruit sweetener
1/2 cup coconut oil (melted)
2 eggs
1 tsp vanilla
3/4 cup dark or semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees and grease two nonstick cookie sheets.
Mix dry ingredients together in a large bowl.
Mix wet ingredients together in a small bowl and gently mix into dry ones.
Form dough into balls and slightly press down onto cookie sheets.
Bake 7-10 minutes, until lightly browned. Don’t over bake! Let cook and enjoy!
