Kale is a favorite in our household, especially this Massaged Kale Greek Salad! Both kiddos go back for second helpings every time, so I consider it a total mom WIN! The bonus is it’s super easy to put together and can be a hearty salad for your main meal. Enjoy!
Massaged Kale Greek Salad (serves 4-5)
Ingredients:
3 bunches fresh kale
2 tomatoes (diced)
1 avocado (diced)
1/2 small red onion (diced finely)
1/2 cup pitted kalamata olives (chopped)
1 cup marinated artichokes (chopped)
1/2 cup crumbled sheep’s milk feta cheese (or cow’s milk feta)
2 tbsp olive oil
3-4 tbsp balsamic vinegar
2 tbsp fresh squeezed lemon juice
2 cloves garlic (minced)
2 tsp Italian seasoning
pinch of salt and pepper
Directions:
Wash, dry and de-stem kale.
Tear or chop kale and add to large bowl.
Add olive oil, vinegar, lemon juice and garlic to kale.
With your hands, slowly massage kale, tossing it over in the bowl to relax kale and coat each leaf with the dressing to marinate it.
Add the rest of the ingredients and toss well.
To make it a main meal, add grilled chicken or steak!
