Another one of our household’s favorite pumpkin recipes is this delicious (and nutritious) pancake recipe that is perfect for a lazy Sunday morning! I love to make a double or triple batch to freeze for the week for quick breakfasts!
Pumpkin Oat Pancakes
2 cups oat flour
1 cup pumpkin puree
1 tsp baking powder
1 tsp cinnamon
1 1/2 tsp pumpkin pie spice
1 Tbsp pure maple syrup
1Tbsp grapeseed oil
1 egg
1 scoop Juice Plus Vanilla Complete powder
2-3 cups unsweetened almond milk
*Handful semi-sweet or dark chocolate chips (optional)
Directions:
Mix dry ingredients together in medium size bowl.
Add the rest of the ingredients and mix well. Note: for thicker pancakes, add less milk and for thinner ones, add more.
Pour batter into prepared griddle on medium heat. Cook 2-3 minutes on each side.
Serve immediately with syrup or your favorite topping!
